The Potsdam Food Co-op's Cheese of the Month for June will be offered during their 2nd Thursday Sampling on June 13th. From 3:30 - 5:30 pm you will have the opportunity to sample Limburger; a semi-soft pasteurized cow's milk cheese that originated in 19th century Europe. Country Castle Limburger is made by the Chalet Cheese Cooperative in Monroe, Wisconsin, the only US producer of limburger. The characteristic aroma of limburger is the result of being surfaced ripened with brine and smeared with beneficial bacteria. The aroma tends to be much more pungent than the flavor. Its rind is orange and sticky, and the interior is pale yellow. Young limburger is mild with a slightly rubbery texture, while mature versions are softer and more pungent. Pair limburger with a dark beer or strong black coffee. Limburger is delicious in a sandwich with rye bread, onions, and mustard or on crackers with strawberry or fig jam. Mix it with other cheeses to top a pizza, or stir it into mac and cheese. It can be used in a grilled cheese sandwich or grated onto casseroles or fries. Try melting it on steaks, burgers, or beef chili. It is particularly tasty on French onion soup! The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm Street and open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
