Cheese sampling in Potsdam

The Potsdam Food Co-op's Cheese of the Month for June will be offered during their 2nd Thursday Sampling on June 14. From 3:30 - 5:30 pm you will have the opportunity to sample Red Dragon, a relatively new Welsh cheddar-type cheese. Considered “A party for your taste buds!”, this cheese is made from pasteurized cow's milk and vegetable rennet, brown ale, and mustard seeds. It is encased in red wax and aged for 3 months. Red Dragon is buttery and moist, and the mustard seeds give it a spicy taste and a bit of texture. This cheese is named for the red dragon that is prominently displayed on the Welsh flag. Red Dragon is sometimes known as Y-Fenni, which is the same cheese encased in yellow wax. Y-Fenni is the Welsh name for the town where the cheese is made. Because it is a combination of cheese and condiment, Red Dragon is especially good on sandwiches. Pair Red Dragon with a hearty ale or a substantial wine such as Shiraz or Zinfandel. Add it to a cheese board and serve with dried or fresh fruit, bread from the Co-op’s Carriage House Bakery, and pale ale. Melt it on a burger, add it to potatoes, or include it in a grilled cheese sandwich. Enjoy a thick piece of Red Dragon in a "Ploughman's Lunch" with relish or chutney, a crusty roll, a green or beet salad, hard boiled egg, pâté, potato chips, and apple slices. The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm St. and is open daily from 8am to 7pm.
