The Potsdam Food Co-op's Cheese of the Month for July will be offered during their 2nd Thursday Sampling on July 11th. From 3:30 - 5:30 pm you will have the opportunity to sample Briar Summit, an Adirondack Artisan Cheese. Nettle Meadow Farm and Artisan Cheese, located in Warrensburg, NY, is home to more than 200 farm sanctuary animals and a cheese company. Briar Summit is a semi-soft pasteurized cheese produced from a combination of goat, cow, sheep milk, and cow cream, infused with raspberry leaf tea and finished with a bloomy rind. This pyramid-shaped vegetarian cheese has a dense fudge-like consistency and a tanginess that is more floral than fruity. Its rich flavor is a balance of sweet, buttery, and bright notes. Briar Summit was the 1st Place Winner for mixed milk, bloomy rind cheeses at US Cheese Championship in 2017, 2nd Place Winner at the American Cheese Society in 2018, and 3rd Place Winner at the World Cheese Championship in 2018 . Reviews of Briar Summit insist that it is best savored "without embellishment". It is also said to be a wonderful addition to a cheese board, served with fresh raspberries, and can also be enjoyed with scones and raspberry jam. Try it on a buttery cracker with raspberry preserves for a bite that is reminiscent of a berry-filled Danish. Pair with traditional champagne. The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm Street and open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
