Cheese sampling in Potsdam

The Potsdam Food Co-op's Cheese of the Month for August will be offered during their 2nd Thursday Sampling on August 9th. From 3:30 - 5:30 pm you will have the opportunity to sample Goat Feta from Cedar Hedge Farm in Lowville, NY. This regional Goat Feta is a lightly salted artisanal cheese made from the pasteurized milk of the Oberhasli and Toggenburg goats on Cedar Hedge Farm. The farm is a 3rd generation dairy farm whose happy and well-cared-for goats are noted for performing well in cooler climates. The creaminess of goat milk makes it ideal for soft cheeses such as feta, which is traditionally made with sheep's milk. Additionally, goat's milk tends to be more easily digested than other dairy. Feta is a salty cheese and should be paired with a more sweet wine such as Sauvignon Blanc, Riesling, or Pinot Noir, or with champagne. Suggestions include adding Goat Feta to a cheese board paired with pine nuts and apples. Use it in your favorite Greek salad recipe or in a green salad with berries and walnuts. Cut small bricks of feta and top with pesto/black pepper, basil/paprika, or ground walnuts; drizzle with olive oil, bake and serve with the Co-op’s Bakery Baguette slices. Try it in bread recipes, include it in a cheese ball or guacamole, or use it to top pizza! The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm St. and is open daily from 8am to 7pm.
