Cheese sampling in Potsdam

The Potsdam Food Co-op's Cheese of the Month for September will be offered during their 2nd Thursday Sampling on September 13th. From 3:30 - 5:30 pm you will have the opportunity to sample Forager, a regional cheese from 5 Spoke Creamery in Goshen, NY. Forager cheese, also known as Herbal Jack, is made with raw cow's milk and a mix of local garlic and chives. It has a tangy bright flavor and a creamy crumbly texture. The raw milk from the grass-fed Holsteins gives the cheese a depth of flavor that is unique to the local site. Forager is handmade in farmstead tradition, free of pesticides and hormones, and produced on site. As with all the cheeses at the 5 Spoke Creamery, it is vegetarian, kosher, and offers all the health benefits inherent to raw milk. The 5 Spoke Creamery name reflects the owner Alan Glustoff's belief that, like riding a bike, the key to a healthy lifestyle is balance. Pair Forager with Riesling or Zinfandel wines, or with Pilsner beers. Suggestions: Forager is a great melting cheese. For depth and a unique flavor, add it to your favorite mac and cheese, tuna melt, or baked cheese snack recipes. Top burgers with it or use it as a full flavor filling in an omelette. It is also a unique addition to a cheese plate alongside smoked or cured meats. Its crumbly quality makes it an excellent addition to salads as well. The Potsdam Food Co-op is located at 24 Elm St. It is open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
