The Potsdam Food Co-op's Cheese of the Month for March will be offered during their “Feature Friday” sampling. On March 13th from 12 - 2pm you will have the opportunity to sample Dubliner by Kerrygold, reported to be complex, worldly, somewhat sweet, and somewhat nutty. Kerrygold Dubliner is a pasteurized cow's milk cheese. Made from the milk of grass-fed cows, it is produced in Carbery, County Cork, Ireland. It is pale yellow in color with a natural rind with the texture of cheddar, the nuttiness of Swiss, and the bite of a good Parmesan. Its well-balanced mix of cheese cultures and naturally occurring amino acids yields its distinctive taste and hint of sweetness. Dubliner is aged for over one year and has a high calcium content. Pair Dubliner with a full bodied red wine such as Cabernet, a fruity wine, or a oaky Chardonnay. Beer lovers may prefer their Dubliner with a good Guinness. Suggestions: Dubliner is perfect for a cheese board alongside smoked salted meats, fruit, and crackers. Use it in sandwiches or shred it into a salad. Dubliner is particularly good melted between two slices of crusty bread, in your favorite mac and cheese recipe, or served atop steamed vegetables or pasta. Dubliner complements dark chocolate, hearty bread, and dried fruits. The Potsdam Food Co-op is located at 24 Elm Street and open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
