The Potsdam Food Co-op's Cheese of the Month for February will be offered during their “Feature Friday” sampling program. On February 14th from 12 - 2pm you will have the opportunity to sample Kunik, touted to be a "swoon-worthy" cheese, just in time for Valentine’s Day. Kunik is a unique triple crème cheese that is made from goat's milk and Jersey cow cream, produced exclusively at the Nettle Meadow Farm in Thurman, NY. It is a soft, white, mold-ripened cheese with a tangy buttery flavor and a thick creamy texture. It is aged 3-4 weeks before release. The blend of goat milk and cow cream makes Kunik richer and more flavorful than brie, but more subtle than similar goat cheeses. Multiple award-winning Kunik is among the cheeses sold at Nettle Meadow Farm and whose sales fund the farm's animal sanctuary. Pair Kunik with champagne, sparkling wine, or pilsner, saison, or wheat beer. Suggestions: Serve Kunik on a cheese plate with crackers and crusty dark bread, or on a dessert plate with fruit and nuts. Spread it on a warm croissant or use it to top a gingersnap cookie or a slice of nut bread. Kunik mini's are also perfect on a green salad. Use Kunik to top a baked potato, add it to a brown rice dish, or drizzle it with lavender honey and serve on crackers. The Potsdam Food Co-op is located at 24 Elm Street and open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
